How to calculate butter

A "stick" of butter is an American packaging convention, not a universal unit — outside the US, butter is sold in solid blocks by weight, usually 250 g or 500 g, with no stick or cup markings at all. Pick whichever unit you're starting from and this converts it to the other three.

One US stick weighs 113 g, equal to half a cup or 8 tablespoons, so a recipe calling for 2 sticks needs 226 g, or 1 cup, or 16 tablespoons — the four figures always move together because they're just different markings on the same physical stick, regardless of which one you start from.

Reading the result

These figures assume standard US butter, which is packaged to those measurements deliberately. A block of butter sold elsewhere in a 250 g or 500 g package won't divide evenly into whole sticks or cups, so weighing it out in grams is usually more accurate than trying to eyeball a fraction of a stick.

Where this goes wrong. A "cup of butter" is not the same kind of cup measurement as a cup of a liquid ingredient — it's derived from the stick markings (½ cup per stick) rather than measured by pouring soft butter into a liquid measuring cup, which tends to trap air and under-fill the true weight.
